Lona Mocksing said her business plan is unique in Tracy but common throughout the Bay Area. She plans to set up her white van marked with a colorful, oversized cupcake in different parking lots a few times a week.
“Tracy doesn’t have a lot like that, so I thought I would fill that gap,” she said. “There was a demand. It’s awesome I get to introduce something like this to the city.”
After having a booth at the downtown farmers market for two years, she unveiled the cupcake van Feb. 13 outside Mia Bella’s Boutique on 10th Street at the request of the shop owner. Within a few hours, her baked goods were sold out.
“The reaction was really, really positive. The city of Tracy wants something like this,” Mocksing said Monday. “It was a really good experience. I got a phone call asking where I was going to be today.”
Mocksing prepares everything in her home kitchen. She focuses on three different kinds of cupcakes each day, but she said Red Velvet — the signature flavor for her and her friend Kathy Lautenslager — would always be available.
Mocksing plans to celebrate the grand opening of her cupcake van on Saturday. She will be parked outside Auto Zone, 1122 W. 11th St., from 11 a.m. to 11:30 a.m.; at JCPenney, 1060 Perimeter Drive, in Manteca from noon to 12:30 p.m.; and at Mountain House’s Central Community Park from 1 p.m. to 1:30 p.m.
